Both guides are correct as they define the two parts of your target landscape. An SAP HANA installation is essentially a distributed model. The server disk layout from the SAP HANA Server guide is used on the backend HANA DB server. The ASCS and PAS installation occurs on a separate Windows or Unix server. This server still utilizes the 'standard' filesystem organization, including /sapmnt, as defined in the SAP Netweaver 7.4 guide you are referring to.
