Usually the schema mapping is used for schema resolution when the the tables are used in the views(attribute, analytical, calculation) i.e, when the source system and destination system has different schemas.
Usually for learning and trail cases you can create procedure,table and so in a schema else the apt way is to create such objects in a package(which in turn is assigned to a Delivery unit) in SAP HANA Development perspective under the content.
Else you need to create the same schema in destination system or edit your script files with the schema name.
